We have selected five pairings that bring out the best in each of our wines, designed to accompany long autumn evenings with harmony and pleasure.
Our flagship red, with its rich Montepulciano-Cannonau blend and 36 months in barrique, finds its ideal partner in slow-braised beef with onion, bay leaf, and a glass of Dante itself. The wine's balsamic notes mirror the herbs in the braising liquid, while its plush texture cuts through the richness of the meat. Serve at 16–18 °C, decanted one hour ahead.
The fresh tannic structure of Virgilio's Marche Sangiovese is the perfect counterpoint to lamb cutlets marinated with rosemary, thyme, and garlic, grilled or roasted. The siliceous minerality — born of sun-facing rocky soils — amplifies the Mediterranean herb flavours. A classic pairing that never disappoints.

Surprising but true: the structured depth of Minosse — with its wildflower honey and pine resin notes — stands up beautifully to a well-made porcini risotto. The white's salinity balances the butter in the rice, while its floral notes open into an unexpected dialogue with the earthiness of the mushroom. A bold pairing worthy of the Dantesque judge.
The iodine-fresh lightness of Beatrice — Passerina from sandy soils — lifts the sweetness of a pumpkin velouté enriched with pan-fried prawns, a little garlic, and parsley. The contrast between the wine's marine note and the vegetable sweetness of the pumpkin creates a delightful equilibrium. Serve cold, at 8–10 °C.
The lime-citrus finish of Caronte, the structured Pecorino at 15% vol., is the natural companion to a mixed Adriatic fry of red mullet, squid, langoustines, and anchovies. The wine's savoury freshness cleanses the palate between bites, revealing ever new aromatic nuances. The perfect pairing to share on the seafront at Cupra Marittima as the sun sets over the Adriatic.
